Known as the ‘Melon Capital’ of Australia, Chinchilla produces a quarter of Australia’s melons and celebrates the fact biennially in February. Join with the locals for some hilarious fun and festivities as events, such as melon skiing, melon iron man, melon bungee, melon bullseye, pip spitting and melon tossing, get into full throw.
There’s back-to-back entertainment for the whole family with markets, a street parade, arts and crafts, a poets' breakfast, luncheons, free concerts, and loads more over the week.  So pull on some old clothes and take to the streets of Chinchilla, that are awash with melon mayhem. But be warned: you might end up in a very sticky situation!
Some of the excitement to look forward to includes:

Chinchilla is a 3.5 hour drive from Brisbane City.  Why not make a weekend of it - accommodation is available for all tastes and budgets.

Christmas Entertainment

I found this information on the Aldi Australia website.  It looks and sounds good.

Baked Camembert with bread

Ingredients:

Preparation:

  • Preheat the oven to 200C/400F/Gas 6.
  • Place cheese in small round dish of roughly the same size.
  • Pierce the top of the cheese in several places with a sharp knife and insert pieces of garlic into the slits and drizzle with olive oil.
  • Bake in the oven for ten minutes, or until the centre of the cheese is melted.
  • Slice the bread, drizzle with olive oil and toast in the oven alongside the cheese.
  • Serve cheese with the toasted bread.
ALDI suggestion: Cranberry sauce is a great accompaniment for baked Camembert. Serve alongside the dish so guests can dip the bread and dollop cranberry on top.

Something light for these hot summer days.

Feta, Green Bean & Tomato Salad

Ingredients:

  • 12 cherry tomatoes, halved
  • 300g trimmed green beans
  • 50g pine nuts
  • 2 handfuls rocket lettuce
  • 175g feta, crumbled or cubed

For the dressing:

  • 1 tbsp red wine vinegar
  • 2 tbsp Worldwide wholegrain mustard
  • 2 garlic cloves, finely chopped
  • ½ tsp Bramwells honey
  • 4 tbsp Casa Barelli olive oil

Preparation:

  1. Boil beans in water for three minutes.
  2. Flash fry halved tomatoes, pine nuts and beans in a pan with a drizzle of olive oil.
  3. In a separate bowl, mix the dressing ingredients together.
  4. Mix the rocket, tomato, beans and pine nuts together with the dressing in a serving bowl.
  5. Add feta pieces to the salad and stir gently.

I'll update this post as I find other delicious recipes worthy of being on here.  :-)
